  • 2 lbs beef (chuck roast or flank steak)
  • 3 tbsp achiote paste
  • 1/4 cup orange juice
  • 2 tbsp lime juice
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp white vinegar
  • 1/2 cup beef broth

Instructions

 

  1. In a bowl, mix achiote paste, orange juice, lime juice, garlic, cumin, smoked paprika, salt, pepper, and vinegar to create the marinade.
  2. Rub the marinade generously over the beef, ensuring even coating. Let it marinate for at least 4 hours or overnight.
  3. Slow Cooker Method: Add marinated beef and beef broth to a slow cooker. Cook on low for 6-8 hours until tender. Shred the beef with forks.
  4. Grill Method: Preheat grill to medium-high heat. Sear beef for 4-5 minutes per side. Let it rest, then slice thinly.
  5. Serve on warm corn tortillas, topped with onions, cilantro, and a squeeze of lime.
