    • 2 lbs bone-in short ribs
    • 3 tbsp olive oil
    • 4 yellow onions, thinly sliced
    • 4 cups beef broth
    • ½ cup red wine or sherry
    • 4 cloves garlic, minced
    • 2 sprigs fresh thyme
    • 2 tbsp butter
  • For the Gruyère Toast

    • 1 French baguette, sliced
    • 1 cup Gruyère cheese, shredded
    • 2 tbsp butter, melted

Instructions

  • Sear the Short Ribs: Heat olive oil in a Dutch oven, season the short ribs, and sear on all sides. Remove and set aside.
  • Caramelize the Onions: Melt butter, add onions, and cook for 45 minutes until deep golden brown. Stir occasionally.
  • Deglaze the Pan: Add red wine or sherry, scraping the pan to incorporate the caramelized bits.
  • Simmer the Soup: Return the short ribs to the pot, add beef broth & thyme, and simmer for 3-4 hours.
  • Prepare the Gruyère Toast: Brush baguette slices with butter, top with Gruyère, and broil until bubbly.
  • Assemble & Serve: Ladle soup into bowls, top with Gruyère toast, and enjoy!
