Ingredients

Scale
  • 2 cups cooked white rice (or brown rice for a healthier twist)
  • 2 cups broccoli florets (fresh or frozen, thawed)
  • 1 can (10.5 oz) cream of mushroom soup (or homemade alternative)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1/4 cup diced onion (optional for flavor boost)
  • 1/4 cup sour cream or Greek yogurt
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 tbsp butter (for sautéing onions)
  • 1/2 cup crushed Ritz crackers or panko (optional topping)

Instructions

  • Preheat the oven to 350°F (175°C).
  • Cook the rice and steam or blanch broccoli until just tender (if using fresh).
  • In a skillet, melt butter and sauté onions until soft (about 3 minutes).
  • In a large bowl, combine rice, broccoli, sautéed onions, soup, sour cream, garlic powder, salt, pepper, and 1 cup of shredded cheese.
  • Mix everything well and spread evenly in a greased 9×13-inch baking dish.
  • Top with extra cheese and optional cracker or panko topping.
  • Bake for 30–35 minutes, or until hot and bubbly with a golden top.
  • Let rest for 5–10 minutes before serving.

Notes

  • Use brown rice or cauliflower rice for a low-carb or fiber-rich version.
  • To make it ahead, assemble and refrigerate for up to 2 days before baking.
  • For extra creaminess, stir in 2 tablespoons of cream cheese before baking.
  • Add diced chicken or turkey to make it a full meal.
