  • 1 cup sweet corn kernels (fresh or canned, drained)

  • ½ cup all-purpose flour

  • ¼ cup cornmeal

  • 1 egg

  • ⅓ cup milk (or plant-based alternative)

  • 1 tsp baking powder

  • Salt and pepper to taste

  • Optional: ¼ cup cream cheese or shredded cheese

Instructions

  • In a bowl, combine corn, flour, cornmeal, and baking powder.

  • Add egg and milk, mix until a thick batter forms.

  • Season with salt and pepper, add cheese if using.

  • Heat oil to 350°F and drop spoonfuls of batter into oil.

  • Fry for 3–4 minutes or until golden brown.

  • Remove and drain on paper towels.

  • Serve warm with dipping sauce.
