A quick and delicious breakfast quesadilla recipe featuring crispy tortillas, fluffy eggs, gooey melted cheese, and your favorite fillings. Perfect for a satisfying morning meal!

Ingredients

  • 2 large eggs
  • 2 flour tortillas
  • ½ cup shredded cheddar cheese
  • 2 slices crispy bacon (or sausage/veggie alternative)
  • 1 tbsp butter
  • Salt and black pepper (to taste)
  • Optional toppings: salsa, guacamole, sour cream

Instructions

  • Heat a nonstick pan over medium heat and melt butter.
  • Scramble the eggs, season with salt and pepper, and cook until just set.
  • Place a tortilla on the pan, sprinkle half the cheese, add eggs and bacon, then top with remaining cheese.
  • Place the second tortilla on top and cook for 2-3 minutes per side, until golden and crispy.
  • Slice and serve with salsa or guacamole.

Notes

  • Swap bacon for turkey sausage or tofu for a vegetarian option.
  • Use whole wheat tortillas for added fiber.
